Rampart Casino to welcome new Italian bistro in September

Spiedini Fiamma Italian Bistro will open in what was once the Spiedini Ristorante.

Rampart Casino in Summerlin will welcome Spiedini Fiamma Italian Bistro, which is currently under construction. The new Italian bistro is scheduled to open at the resort next month, according to a report from the Las Vegas Review-Journal.

No details have been released about an opening date.

Fiamma will occupy the space that was once the home of Spiedini Ristorante. The restaurant closed in March 2020 during the onset of the Covid-19 pandemic. Prior to its closing, Spiedini Ristorante was operated by Las Vegas chef Gustav Mauler.

Fiamma will undergo a redesign that includes a private dining room terrace, an open kitchen and a large bar. The terrace space will contain fire pits that pay homage to the restaurant’s name, which means “flame.”

The private dining area will be able to accommodate up to 50 guests. Part of the space will contain an outdoor patio and a waterfall. Guests will have access to the private space for regular dining and will also be able to reserve the area for weddings and other special occasions.

Once open, the bistro will feature a new Italian menu and will welcome a new chef. Menu specifics have not been disclosed as of yet.

A property representative described the new restaurant’s décor as a “very coastal vibe, with blues and soft curves throughout that somewhat mimic waves.”

The bistro will be open during dinner hours during the week, welcoming patrons from 5pm to 9pm from Sunday to Thursday. Dining hours on Friday and Saturday will be from 5pm to 10pm.
