Las Vegas sushi stalwart Kumi to open in New York City
Vegas favorite finds a new home in the most competitive restaurant market in the country.
Straddling the great nodes of American gaming, Las Vegas sushi institution Kumi will be opening a location in New York City, the undisputed restaurant capital of the United States.
Kumi – which is owned by the Disruptive Restaurant Group from sbe (name of company) – occupies a space at Mandalay Bay Resort & Casino. Its Manhattan location will be at Le Meridien on West 57th Street.
The menu at Kumi is Japanese cuisine interpreted through a lens of Korean-American sensibilities. Among the signature items are Green Teach Smoked Chicken as well as a braised short rib served with wild mushrooms, truffles and charred pear.
The new location will be headed by native New Yorker Anastacia Song. In comments she set forth her vision for the spot: “I was inspired to create a menu that matches the bold flavor of New York City and the sophisticated palate of our diners.
“Kumi’s new menu has something for everyone, East Asian ingredients coupled with Korean flair and, best of all, our ingredients are all sustainably sourced, providing a feel-good menu to satisfy one’s every craving.”
The Disruptive Restaurant Group from sbe is an incubator of culinary talent with a global reach.
