Salt & Straw ice cream opens first Las Vegas Strip locations

Artisan ice cream company Salt & Straw has officially launched on the Las Vegas Strip, opening two new ice cream scoop shops at Paris Las Vegas and Flamingo Las Vegas. The locations opened on Wednesday 31 December, marking the brand’s debut in one of the world’s most visited tourist corridors.

This comes after Bally’s Las Vegas revealed plans for a new integrated casino resort on the former Tropicana site, with development set to begin in the first half of 2026. The project will include a casino, a baseball stadium, two hotel towers with 3,000 rooms and a 2,500-seat entertainment venue.

Both ice cream shops are positioned along Las Vegas Boulevard and offer direct sidewalk access, making them easily accessible to visitors and locals. The Paris Las Vegas location sits beneath the resort’s Eiffel Tower replica, while the Flamingo Las Vegas shop is located adjacent to Gordon Ramsay Burger.

The new Salt & Straw ice cream shop at Flamingo Las Vegas will complement the resort’s old-school charm by offering a modern, artisanal treat that guests can enjoy.

To mark the opening, Salt & Straw has introduced the Icons Series, a limited menu highlighting a selection of flavours created by co-founder and head ice cream maker Tyler Malek. The series focuses on flavours that have become closely associated with the brand since its founding.

The Las Vegas locations will offer 13 core flavours, including Sea Salt with Caramel Ribbons, Honey Lavender, Arbequina Olive Oil and Chocolate Gooey Brownie.

Salt & Straw was founded by cousins Kim and Tyler Malek and is known for combining traditional ice cream bases with unconventional ingredients. Its menu includes both year-round flavours and rotating monthly selections inspired by seasonal ingredients, cultural themes and collaborations with farmers and artisans.
